Are brains called sweetbreads
Cow brains are referred to as beef brains.They look similar and are prepared to eat similarly, but sweetbreads are made.(the animal in question can be a hog or calf or just about any other large mammal, i gather.) they're called sweetbreads for the obvious.I would add marginally juicy. sweetbreads made from an animal's pancreas and thymus glands (called the heart sweetbread and throat sweetbread, respectively).People often describe the texture as tender and creamy;
Guess thymus and pancreas don't have the same ring.Sweetbreads are the thymus and pancreas glands of animals.It's that the image conjured up by the name couldn't be further from the reality of what it is.Classic recipes call for a preliminary blanching.See answer (1) best answer.
Only the pancreas or thymus glands are considered sweetbreads.
